Through a joint venture with the Malaysian processing and distribution company Eastern Global, GenoMar is preparing to start a filleting operation near Gerik, about half an hour’s drive from the fish farm.
The harvested tilapia is killed, bled, and gutted before skinning. The fish is then hand-filleted for maximum yield, and then individually quick frozen in a blast freezer before it is packed for export.
